Italian Swordfish

Preheat oven to 425. Place salt in a small bowl and add lemon juice. Beat well with a fork until all of the salt is completely dissolved. Trickle in oil, drop by drop, beat with a fork to blend it. Add pepper to taste (the amount given above is just a guideline), stir, then add oregano and stir. Line a baking dish with foil, pour half of lemon/oregano mix into the bottom, pierce the steaks with a fork on both sides, then place them in the baking dish. Add remaining lemon/oregano mix on top of the steaks. Cover fish with foil and bake at 425 for 30 minutes.
 
The key to this recipe is using very fresh lemons and oregano, mainly for the smell.
