Italian Swordfish
- Ingredients:
- 4 large swordfish steaks
- 2 tablespoons fresh squeezed lemon juice
- 2 teaspoons fresh oregano
- 1/4 cup virgin olive oil
- 1 tablespoon salt
- 1/8 teaspoon fresh ground black pepper
- Directions:
- Preheat oven to 425. Place salt in a small bowl and add
lemon juice. Beat well with a fork until all of the salt
is completely dissolved. Trickle in oil, drop by drop,
beat with a fork to blend it. Add pepper to taste (the
amount given above is just a guideline), stir, then add
oregano and stir. Line a baking dish with foil, pour half
of lemon/oregano mix into the bottom, pierce the steaks
with a fork on both sides, then place them in the baking
dish. Add remaining lemon/oregano mix on top of the
steaks. Cover fish with foil and bake at 425 for 30
minutes.

- The key to this recipe is using very fresh lemons and
oregano, mainly for the smell.
