Day 1-3 - Mix 1 gallon of water with 1 cup
of salt. Cover whole cucumbers with salt water in a
stone jar. Let stand for 3 days.
Day 4-6 - Drain. Cover pickles in clear
water. Let stand for 3 days, draining and adding new,
clear water each day.
Day 7
- Drain. Cut pickles in ½ inch chunks. Bring
pickles, 1 gallon warm water, 1 pint vinegar and ½
tsp powdered alum just to the boiling point. Let
stand ½ hour or longer. Drain well.
Tie cinnamon, cloves and allspice in cheesecloth.
Boil vinegar, sugar and spices for 3 minutes. Pour
over pickles. Let stand for 24 hours.
Day 8
- Drain. Boil 1 gallon of water. Pour over pickles.
Let stand.
Day 9-11 - Pour off syrup. Reheat syrup and
pour over pickles. Let stand on Days 9 and 10. On Day
11, after reheating syrup, put pickles in jars. Pour
boiling syrup on top. Seal.
Note: The original recipe is called "9 Day
Pickles." It is not written with each day broken out
as I have done. Rather, it is in a narrative form: Do
this for 3 days, that for 1 day, the other thing for 3
days, etc. After (re)counting, I came up with 11 days. I
will check with my mother.
